Keto Recipe Digest # 2

Hi Everyone,
So welcome to recipe digest week two. This week I was doing a lot of running around so I wanted lunches and dinners that can come together quickly...I also like recipes that I can make one time, and make differently for a whole different flavour profile another time.
I've also started to notice that the morning are colder so I'm starting to think about fall flavours like ginger, cinnamon and pumpkin... but feeling sad that summer feels like it's gone by too quickly and all those fresh flavours like lemon and berry are going to be missing...
So this week's collection is a bit of all of that. In this installment you've got:
1. stuffed peppers with 3 variations and a vegetarian option (I like these because you can do them in either the slow cooker or the oven, they are nice for either lunch or dinner, you can make just enough to feed yourself at the moment or make a tonne of them and have them all week (or even freeze them and take ‘em out later).
2. bell pepper nachos - I like these because they are stupidly quick to put together so when you want something that isn't a charcuterie plate for dinner but don't really feel like cooking.... this is a good choice. And they are totally adaptable to your tastes, don't like sour cream? don't add it, love cilantro? add more of it... these are nice made as a vegetarian dish or with whatever kind of meat you want to throw on them.
3. bacon club with chipotle mayo - hello fancy lunch! :)
4. chewy ginger cookies - because ginger... and cookies and it's almost October and the leaves are changing and wouldn't one of these goes really nicely with a cup of coffee or a cup of tea about now?.... enough said.
5. Lemon meringue pie.... this is really like 3 recipes in a one... the pie crust, which obviously you can fill with more than just lemon. the lemon curd, which is also nice just on its own, or topped with whipped cream and a few blueberries (keyword is few here folks) ...or even frozen so it's a popsicle, and the meringue .. because you can't have a lemon meringue pie without it.
