Keto Recipe Digest #3

Happy Friday Everyone.

Being in Kincardine, we don't have the largest selection of international cuisine choices... and forget about them being low-carb or keto-friendly! So, you may have noticed a lot of photos of international recipes floating across my facebook feed as a result... today's batch of recipes includes 3 of those recipes:

- Mongolian beef

- Indonesian mei goreng, and

- Thai lime Chicken Salad

What I like about all of these is they come together really quickly with a minimum of fuss and, and don't require a lot of prep or set up (each of them takes about 30 minutes or less of prep time to get them to the table) and they are jam packed with flavour.... As always, Rob is my barometer on how good a dish is. He can be very critical if a keto dish doesn't live up to its "high test" counterpart ... so if he says he likes a dish, then it definitely goes into the "keeper file" and all of these recipes past that test.

This weekend also marks the Jewish New Year (Rosh Hashana - translates to the "head of the year"). As always this is celebrated with a huge meal with various symbolic elements. As Rosh Hashana is really a celebration of the Fall Harvest and sharing best wishing with each other that we might all have a health,y happy, "sweet" new year, this festival meal is characterized by the presence of apples (denoting the fall harvest) which are usually dipped in honey (to represent the wishes for a sweet new year).

My grandmothers often hosted the Rosh Hashana meal, and each of them had a signature cake that we all looked forward to. My mother's mom made this most delicious apple cake and my dad's mom made this honey cake what was warm and sticky and truly amazing. Do you know how you have those certain foods in your life that bring to mind certain people in your life? ...well the honey cake and the apple cake are two of those for me and bring back memories of both of these wonderful ladies. As most cooks and bakers of their generation, they never used a written recipe, so they didn't hand these down and most of us thought they were lost to the family. I spent many years experimenting to recreate both of those recipes and in previous years often made an apple cake and or a honey cake to bring to the table. Up until now, I have been hesitant to try and "keto-fy" them because I was worried the keto version wouldn't do the food memory justice.... but I admit, I have missed those flavours. So this year I decided to experiment again and I'm so glad I did. this digest includes a copy of my revamped honey cake recipe...and while it's not as keto as many other of my dessert recipes (coming in at about 12 net carbs and 242 calories per slice assuming you cut your bundt cake into 16 slices).. it's still far lower carb than the original recipe (which worked out to about 65 net carbs and 419 calories for the same serving) and more importantly, it's got all the flavour and texture I remember... so I'll definitely be making this "fit my macros" this year. Even if you aren't celebrating the Jewish New year, this is an amazing call flavoured cake, so if you want to try my lower carb version of Bubbie's Honey Cake, it's also included in this week's digest.

Last but not least... is the recipe for blueberry hazelnut muffins. This recipe was created for Maddie...I don't believe she has ever met a muffin she didn't like and when we were travelling weekly back and forth to get her to school in Port Elgin, we had to leave the house so early to make sure I was back in time for the start of my workday.... we often would stop at Tim Horton's on our way out of town for a muffin and milk or tea so she could eat breakfast on the way. The hazelnut and blueberry combination really work well together here.
