Keto Recipe Digest #8

Wow, we're at number 8 .... does this really mark two months of Keto recipe digests? I guess it does and isn't that kind of exciting? I hope you still find them useful and interesting (but if not, by all means, send me a note and I'll take you off the distribution list).

It's finally November, and while this doesn't sound like it's something to get super excited about, for me it means three consecutive weekends where I don't have to go anywhere but the Saturday morning still life drawing workshop that Maddie and I are rostered for... and that means I can get finally get around to paying attention to the house again and doing a bit of "better than functional" cooking....all in the comfort of my loungewear.

I'm also being asked to wake up at an ungodly hour to watch England play Rugby 5 am on Saturday morning... I don't even get up to get to work that early!!! Well, that being said, this week's theme is dedicated to the Brits, and particularly the ginger-haired variety that think it's okay to ask this sleep-loving canuck to get up at the crack of stupid to watch a game she doesn't understand... GO ENGLAND!!!

So in this digest you have:

1. low carb sausage rolls - these are soooo good. Even other brits besides the one I live with likes 'em. Some of them are even on the mailing list for this digest. Oh, and they freeze well.. perfect for parties or breakfast watching rugby at 5 am.

2. Toad in the hole - not the egg cracked into a piece of bread fried in a pan recipe I grew up with, the sausages baked in Yorkshire pudding batter recipe. This is not a recipe that is a true Yorkshire pudding substitute, but it does a decent job of getting you almost there.

3. sticky toffee pudding - because sticky toffee pudding that's why! this recipe is small, two servings only so you can' t go too overboard .... or you can just double and triple the batch, your choice :)

4. Eton mess - I love Eton mess. I haven't found a perfect keto substitute for my favourite, proper meringues like you would want to use in an Eton mess recipe...but if you make these ahead by a day or two and let them crisp up, they won't be too far off the mark.

5. scotch eggs - rob would live off of these and pork pies for every meal if he thought he could get away with it. I love how perfectly portable these are and bring them for lunches.

6. scones- I’m not going to get into the debate about if the cream goes on before the jam or vice versa.. or if slathering whipped cream or butter versus clotted cream is acceptable... all I know is a good scone is nice for breakfast, or even with a cup of tea mid-afternoon.... these aren't perfect keto substitutes for scones, but hey...nothing will be, we aren't using real wheat flour. But they are nice even so...and are good holders of cream and jam (in whichever layering format you prefer.

7. Bakewell tarts- I love almonds, I love raspberry... it's like the British came up with the Bakewell tart just for me, Thank you Brits!!! this recipe adapts really well to keto because the crust uses almond flour which just naturally enhances the flavours you're going for already.
