Keto Recipe Digest #8…again

Happy Friday Everyone...

Or should I say, happy end to Friday? Who knew this was going to be a 12 hour day for me today? ...Certainly not me. But it's okay because now the weekend has officially begun and I am typing this in my lounge pants, so I’m a happy girl again!

If I had to give this week's digest a theme it would be "winter batch cooking, breakfast and a salad to make me feel better". ....so without further ado, this is what we've got in the attachments:

1. roasted everything cauliflower chowder - This soup made it to Facebook this week... it's rich and thick and makes great leftovers. it's easily adaptable and really not at all spicy the way it's written, so don't be put off by the jalapenos... and even add more if you want to kick it up a notch....oh and did I mention it freezes well?

2. Rueben casserole - one of my favourite deli sandwiches is the Reuben. This casserole has all the flavours and none of the bread. It's always a big hit when I make it, you can make it with sliced corned beef from the deli counter or one of those bagged corned beef packages at the meat counter. This past week I doubled the recipe so I had enough to feed us lunch and dinner on those late nights like tonight without thinking about it... But did I mention it freezes well?

3. Jalapeno Popper Buffalo Chicken Popper Casserole - Love jalapeno poppers? Love buffalo chicken? then you will love this casserole... it's the best mashup ever and it doesn't seem to matter how much of this I make at any one time, it never seems to be enough because everyone seems to go for seconds. I was also going to mention.......it freezes well :)

4. the keto breakfast sandwich - this one is for a very good friend of mine who makes the best breakfast sandwiches the next morning when we visit for the next morning. It a pretty good riff on the McWhatever sandwich (depending on if you use bacon or sausage ... or just skip all that and leave it as a basic egg and cheese... or get a little fancy and add some sliced tomato and/or avocado). The beauty of this sandwich is you don't have to do any preplanning for it beyond having the ingredients on hand. The "muffin" comes together in minutes by hand and gets cooked in the microwave so it's done even before your egg is finished frying.

5. keto grilled cheese - everyone loves a grilled cheese and sure, you can make a really good one using a purchased low carb bread... but what about those nights when you want a grilled cheese sandwich and you didn't have the foresight to go order a low carb loaf of bread a week ago so it would have been delivered in time for this craving? Enter this grilled cheese recipe, the "bread" is based on the "muffin" from the keto breakfast sandwich recipe" so it comes together in about a minute (you're just going to microwave it in a square tupper container instead of a round container). IT's brilliant and perfect for those sandwich cravings.

6.Neapolitan chia pudding - this is just a nice little chia pudding that comes together pretty quickly and who doesn't like chocolate, strawberry and vanilla. that's totally vegetarian and dairy-free. This one works as breakfast, lunch, snack dessert or just because. If the texture of whole chia throws you off a bit, you can very lightly grind it a bit, just remember it will congeal "more" when it's ground so you might have to adjust your liquid measures accordingly to get the texture you want.

7. Charred veggie salad with goat cheese - Another vegetarian entry to the list, because a) it's always good to get veggies into you and b) I'm a sucker for warm goat cheese in salad. this salad has enough substance to it that it could be a stand-alone meal for lunch or dinner and could also be "greened up" a little further by laying it all out on a bed of arugula.
