Keto Recipe Digest #7

You may be wondering to yourself as you read this, ”hey! It's only Thursday... This email is a day early in my inbox”... And you’d be right.


This weekend I will be completely tied up... In fact, I am even now, sitting in Morgantown, WV waiting for my car to finish charging so I can leave it in a parking lot all weekend while I try to be useful in a succession of meetings. So, I figured I’d get this out early and isn't this a nice way to pass sometime when you are stuck in ”wait” mode.


This week has seen the weather get a bit nippier in the evenings and early mornings and it puts me in mind of warm comfort foods... So that’s the theme on this week’s digest.


This week’s line-up is a little shorter, only four recipes, but they are some of my favourites because they are perfect for this time of year.

  1. Sheppard’s (or cottage) pie - Whatever kind of mince you use (even if you are subbing a veggie meat substitute) a Sheppard pie with creamy mash on top is a go to in cold weather. This recipe is big enough to feed the three of us for dinner and have a lunch for each of us (if Maddie or I am serving portions)... Or two servings for Rob as this is one of his favourites. This one isn't quite like his mum’s recipe, but he’ll still ask for seconds and look sideways at your plate if you haven't finished, so I call it a win.

  2. White chicken chili - everyone has their favourite beef based chili recipe and frankly it's easy to convert to Keto by just omitting the beans, and I love my chili recipe, but you probably like yours too, so make yours... Just skip the beans. Now a white chilli on the other hand, is kind of a spin on the whole chili thing, and I love a good spin on things... I was introduced to this recipe about 10 years ago and have fiddled with it a lot and it's a nice change up from the regular beef chili. If you haven't tried a white chili before, maybe it's time to try one now?

  3. Cheddar jalapeno cornbread muffins - chili is just better with cornbread... They are like Sonny and Cher, Rootbeer and Vanilla Ice Cream, a good purse to match the heels.... They just go together. This recipe is amazing. I made it ages ago for two friends who owned a restaurant once when they were over for dinner (we were having a tex-mex night in Bruce county where tex-mex couldn't be found) and they practically finished the whole batch... And didn't know it was Keto until afterwards. It's just that good.... And best eaten warm in my humble opinion.

  4. Vanilla Cake - I was told this week that a good friend was going to make me a cake for my recent birthday, but they didn't have a recipe for a good Keto cake.... Everyone needs a good cake recipe! (even if they aren't going to make it for my birthday ) Maybe you’ll make it for yours?

Okay, the car says we are ready to continue our journey to our final destination tonight. Hope you have a wonderful weekend (and maybe it will include a piece of cake).
