Keto Recipe Digest # 26
Good Morning Everyone and Happy Friday.
I hope everyone is making out okay wherever you happen to be doing whatever it is you need to be doing. Today marks my second work from home day and I'm noticing a few things:
1. I really like being able to look outside my windows when I'm taking a break from the screen (my office in the office has no windows)
2. Because there is no commute, and I am getting up with Rob (who is currently working a 3 on 3 off,12-hour shift pattern supporting the emergency commander centre at Site), I am putting in far more than my base 8 hours a day
3. The coffee I get to drink in the morning has significantly improved :)
I hope you are able to find some silver linings too.... this is all quite a lot to deal with for many.
Well, anyway.... on to this week's line-up! ....Which is all on point for a middle eastern feast. (Yeah, I'm sorry..... I was craving falafel).
If you don't generally frequent middle eastern restaurants then you probably aren't familiar with how a meal at one of these places works... it starts off with a huge selection of dips, salads and small bites (like falafels), served with pita bread...then followed by some highly seasoned proteins (shwarma, roasted chicken, etc.... again served with perhaps some rice (cauliflower rice in our case), more pita bread and salad. and then you finish all that off with some honey-drenched, nut-filled sweet that sends your blood sugar through the roof and makes you very happy... So, that's what you're getting in this week's batch of recipes:
1. low carb flatbread - it goes without saying that if you are going to have a plateful of dippy things, you're going to want something to dip into them... this is a flatbread based on the fathead dough recipe... you're not going to be able to cut it open like a true pita to make a falafel sandwich, but if you flatten it out thin and large enough, you could probably to a folded version of a falafel sandwich (just sayin')
2. Dips - I give you the standards made over keto... Hummus and baba ganoush
3. Salads - these are two of my favourites.... a simple Israeli salad which is essentially a tomato and cucumber salad and a Moroccan eggplant salad
4, Falafel - As a kid going to a private Hebrew school until starting high school, you were only allowed to have dairy or vegetarian-based kosher meals. Our middle school offered a limited selection of hot food for lunch... a cheese pizza or falafel, it was always all about the falafel. These are a reasonable facsimile considering they are chickpea-free.
5. Zaatar Ras el Hanout Chicken and Spinach Skillet - True, you might not currently have some of the spices in this dish stocked in your pantry... but, that's what Amazon is for. this is perfect served with that cauliflower rice, and/or some more flatbread... you should just make a double batch of that stuff anyway :)
6. Shakshuka with Feta - Shakshuka, is like an Israeli version of eggs in purgatory... where you let eggs cook in the oven surrounded by a tomato sauce and then you eat it with some nice warm flatbread to soak up the eggs and sauce. This is a pretty simple dish to prepare and is perfect for a lazy breakfast, but it also works at lunch or dinner too
7. Keto Baklava - Okay, there is no real way to re-create a true "keto Baklava" because there isn't any good way to re-create the phyllo...which is so key to the flavour and texture of that dessert... but this is pretty good and gets really close.
