Keto Recipe Digest # 25

Good Morning Everyone,

Hopefully, you are all doing well and keeping yourself sane if you are working from home these days. Here are a few recipes to help things along in that arena.

1. Keto Bread - If you've been doing any surfing on Instagram or Twitter you've probably seen this uptick in posts where people are sharing their bread baking adventures...especially sourdough, I guess everyone has the time to experiment with sourdough starter fermentation... But alas, bread isn't considered a keto-friendly food item... but this one is. It's a yeast-based recipe so you get that true bread flavour and if you have a bread machine, you can work it up in there too.

2. Keto Chia Jam - If you're going to have freshly baked bread in the house, you need a good jam. Of course, most jams are major vehicles for sugar, but these ones aren't and this recipe has 3 berry variations.

3. Keto sheet pan chicken thighs - sheet pan recipes are great because they are low on the "kitchen mess' scale and super easy to throw together... when you're busy catching up on Netflix or going through your storage room to clear things out, this is a good thing to have in a recipe. This one has some greek flavours going with feta, garlic and dill.

4. Keto Mushroom "wild rice" pilaf - every good main dish needs a good side to accompany it. This pilaf uses hemp hearts to replace the rice which gives a good "rice-like" bite from a textural point of view. Hemp hearts are a serious nutritional powerhouse containing a high amount of omega-3 and omega-6 fatty acids, iron, zinc, magnesium, fibre and protein.

5. Low carb rum raisin no-bake cheesecake - It's was Rob's birthday yesterday and I wanted to do something special for his cake seeing as how all of my original plans to celebrate kind of fell apart. One of his favourite chocolate bars is Cadbury or Bournville Rum Raisin, which you can't really find here in Canada. It's a nice bar with a really full rum raisin flavour, and I wanted to try and re-create that for him. This recipe can't be called keto because of the raisins, but everything else about it definitely falls in the keto category...and it was really really yummy!
