Keto Recipe Digest # 23
Good Morning and Happy Saturday Everyone,
Digest 23 is a day late because there was a lot going on yesterday,
but it’s not going to be any less amazing for it...because this week’s
theme is St.Patrick’s Day, which also happens to be my sister’s
birthday...so the first recipe on offer is all about her.
1. Vanilla Whiskey Mug Cake - back when both my sister and I could
count our ages in single digits, our parents would often end up
working really late, which meant our grandmother, who often stepped in
to cart us around and get us home or fed, happened to be in charge of
getting us home from school and fed on my sister’s birthday. When our
grandmother realized there was no cake for my sister on this weeknight
birthday, she immediately went out to the closest grocery store to
find a cake, but all there was on offer were the white frosting, green
icing trimmed St. Paddy’s day cakes.... so that’s what we put the
candles into and celebrated with. This isn’t that cake...in fact, it’s
better for so many reasons... 1. it’s a full-on grown-up girl’s keto
vanilla whiskey cake (that can also be enjoyed by grown-up boys) ..and
who doesn’t love vanilla and whiskey? and 2. it’s a single-serve mug
cake, so a birthday girl doesn’t have to share if she doesn’t want
to... happy birthday lady!
2. Guinness Chocolate Pudding - now you’re looking at this and thinking
to your self, Shosh, I get the chocolate in a keto recipe...but
Guinness??? Yes, Guinness, because it’s all about what fits your macros
and Guinness is actually a lower-carb beer than most (and for some of
us, we can use the boost of iron every now and then). This is a
seriously rich chocolate pudding, the recipe makes 8 servings and each
is about 5 net carbs... so you’re really going to want to work your
day around this one if you decide to make it... but some days,
something chocolate is worth the extra carb or two.
3. corned beef hash breakfast skillet - corned beef hash was one of my
dad’s favourite breakfast meals (aside from steak and eggs)... this
one includes a dose of homemade Russian dressing which really jazzes
it out.
4. Rueben chopped salad - I love a good Rueben sandwich, as you can
probably tell by the Rueben casserole recipe from a digest back and
these here... this one also gets dressed out in the homemade Russian
dressing.
5. Russian dressing - surprise! you didn’t see this recipe coming
after the last two did you? :)
6. copycat bailey’s - the idea of sipping on a glass of bailey’s over
ice brings to mind lots of good memories with family and friends and
certain special occasions. My mom in particular, who is not a drinker
by any means can make a glass of bailey’s last all night as she slowly
sips at it....of course, regular bailey’s is way out of the questions
being so loaded up with sugar, but this recipe puts bailey’s back in
the world again and isn’t that a nice thought?
