Keto Recipe Digest # 20
Good Morning Everyone and Happy “was Friday 6 minutes ago and now it’s Saturday”...
Sorry to keep you all waiting, but it’s Maddie’s birthday weekend and we have UK visitors so it’s been a bit hectic and as a result, this digest will be very brief ...
First off, Maple bacon crack - I first made this a few years ago at one of our very first “Baconfest” events (that’s where every dish needs to have bacon in it to be served…including dessert). It didn’t last long.... you should try it if you’ve never had it.
Next up - a pretty standard Cobb salad ..... with a slightly different dressing than the standard. I am a sucker for blue cheese and the lemon yogurt dressing plays off a good blue nicely ....but Maddie prefers this salad with a nice crumbling of goat cheese instead and it also plays well with the lemon.
Loaded pizza bars - think of these as a handheld crustless quiche....that’s pizza flavoured. Yup, you can eat pizza for breakfast lunch and dinner guilt. Free and not be a university student. The nice thing about this recipe is the fact that you can modify the layers to suit your own taste...don’t like sausage - leave it out, the choice is yours.
Root veg zoodle soup - depending on how big your carrot and parsnip are, this soup may get a bit “carb-ier” than if you left them out, but remember if it fits your macros than build the recipe exactly as written...it’s got all sorts of good vitamins and umami goodness, And you can make it vegetarian too so it’s like a two for one recipe right?
Cream cheese matcha cookies - Maddie is fully on a matcha kick these days... and she’s a big fan of a good cookie...this recipe is for her.
