Keto Recipe Digest # 18

Hello and Happy Friday Everyone,

I've actually got a day where I don't have to eat lunch at my desk for a change so I thought I'd get this out a bit earlier today.

This week I have been trying to take the advice of a friend and focus on de-stressing myself a bit, and while this has included taking some time out for some mindful breathing and a nice cup of tea, it also means working on a new painting and doing some baking are planned on the schedule for this weekend.

So this week's digest is all about baking. There is something really therapeutic about the precise measuring and weighing required for baking (well for me at least there is) and that sense of accomplishment when something yummy comes out of the oven is one of those "little things" that puts a smile on my face. The fact that these are all Keto-friendly baked goods is a super bonus so I can eat guilt-free.

So what have we got in this week's line up you ask? ...I'm so glad you did.

1. Cranberry bliss bars - this is a pretty good copycat of those insanely addictive Starbucks bars that come out around Christmas time. The Jew in me does not agree that they have to only be for the holiday season... cranberries and white chocolate are always okay in my books. I've brought these with me to a few company potluck events... no one has ever guessed they were keto and they never last.

2. Red velvet zucchini muffins - the zucchini keeps these moist and makes me feel like I"m being extra good because there's a vegetable in my muffin... so I can convince myself it's okay to have one for breakfast even though there's frosting on it. And it's a muffin because Miss Maddie loves her hand-held cakes and that girl is everything.

3. Maple cream cookies - these are a keto-fied version of those little maple leaf-shaped cookies someone from the Uk might bring back with them after a trip to Canada because hey, it's maple and their shaped like little leaves. These ones aren't shaped like little leaves, but they're still a nice little maple flavoured cream sandwich cookie

4. Keto "Nutter Butters" - It's a fact, Maddie and I are both nuts about peanut.. growing up I used to love Mr. Christie Pirate Cookies, which are the Canadian version of the US Nutter Butter cookies, but without being shaped like a cute little peanut. This is a keto friend version of that peanut flavoured cream sandwich cookie.

5. Bacon and Cheese Biscuits - Who doesn't love a good biscuit? I used to make cheese biscuits all the time and then found it was something I did very rarely. I don't know why - they are dead simple and I've always had to fight both Miss M and Rob off from eating the whole batch between them when I have. This is a bacon a cheese version of a keto-friendly biscuit. Of course, you don't need to add the bacon, and could always substitute it for say smoked salmon instead but I'm a sucker for bacon.

6. Tortilla Chips - You can't have a good plate of nachos without nacho chips. I love a good plate of nachos.
