Keto Recipe Digest # 16

Happy Friday Everyone,

This week's digest is called - What I served for dinner last Saturday and we went Mexican for that meal (because I'm a sucker for a good Mexican meal).

Now it's true that the meal I served was preceded with some jalapeno poppers and guacamole, but I figure everyone has a favourite guacamole recipe and jalapeno popper recipes are a dime a dozen on Pinterest... so you're not getting recipes for those. Sorry.

Here are the recipes you ARE getting though.

1. Instant Pot Pork (or Beef) Carnitas - Now I know an instant pot isn't a staple appliance in most houses, but I happen to have one and I kinds of love it (I've made the best yogurt I've ever eaten in that thing among many other seriously good recipes...if I do say so myself...which I guess I am)... But if you don't own one of these babies, perhaps you own a slow cooker and I've given you the directions for making these in that as well. These carnitas were juicy and crispy and flavourful and not crazy spicy (but certainly you could amp up the spice in this dish if you were so inclined). Serve them in some low carb tortillas or over a salad with some cheese and maybe some pickled red onions and you've got a good lunch or dinner happening.

2. Mexican Coleslaw - This is not a creamy coleslaw, so if you like that style don't bother making this dish... or better yet, make this dish and reduce the amount of oil by half and substitute if for the same amount of greek yogurt or mayo and BOOM! creamy Mexican coleslaw. This coleslaw has some nice punchy Mexican flavours and sits really well on top of those carnitas in a low carb tortilla ...wink, wink, nudge, nudge.

3. Mexican Cauliflower Rice - Actually I didn't end up making this dish last Saturday because I ended up with enough food as it was to feed everybody at the table and still have leftovers for lunches, but it was on the roster to be made that night so I'm adding it here. Think of that slightly " tomato and spices" side of rice that usually comes with a Mexican combo plate at your favourite Mexican place and that's this dish...except with Cauliflower instead of rice.

4. Keto Sweetened Condensed Milk - How do you make a good keto version of Vietnamese coffee, of fudge, or banoffee pie or tres leche cake without a keto version of sweetened condensed milk...the answer is you can't really. So, enter in keto condensed milk. This recipe takes a bit of time because it has to boil down to get to the right consistency, but it's a very easy recipe and is a low maintenance babysitting job while it's on the stove...and not only is it worth making so you can make the tres leche cake, it's worth making in double and triple batches because it's delicious... WARNING! THIS STUFF IS DELICIOUS

5. Tres Leche Cake - translates to "three milks cake" because it's a recipe which uses ------ wait for it ------three different dairies in it (I admit, I love things that are just that digital). This is a really easy to make vanilla cake that has hints of cinnamon and a nice light texture. Who doesn't like vanilla, cinnamon and cream? If you know someone like that, don't invite them over when you make this cake.
