Keto Recipe Digest # 12 … now #28

Hi Everyone and welcome to another socially distant Friday.
So this week I'm revisiting digest number 12 which was never sent out at the end of November.... I think I'm ready...and frankly, the recipes in this digest are all about Italian food. I love Italian food. My dad loved Italian food... and this digest has one of the best keto lasagna recipes I have ever made or ever tasted... and I have tried a few! So it would be just plain wrong not to share these ...so without further ado - the recipes:
Italian wedding soup- so this is another one of those dishes that comes with a story. My last year of high school was spent attending a school in a pretty rough neighbourhood in Toronto. It was on the border of Little Italy and Little Jamaica which meant there was some pretty amazing food on offer.... including the lunch counter at the school, which was run by three little old Italian ladies that made everything from scratch. I had a spare just before lunch, and often used it to study in the cafeteria... those three ladies knew I didn't live at home and decided to make me a deal... help serve lunch and get a free lunch... a seriously good deal when you are talking about homemade Italian wedding soup, with roast chicken and potatoes.
Copy cat Olive Garden Salad (and Dressing of course) - We used to have Olive Garden up in Canada. Back when I was dating my ex in high school, he was a bartender at our local restaurant. the best part about going to the olive garden was the fettuccini alfredo and the salad ...although fettuccine is out, alfredo sauce is totally in and so is this salad.
Chicken Ceasar Salad with Crispy Kale - This is a nice spin on the standard Ceasar and it makes a perfectly well-rounded lunch.
creamy garlic feta dressing - If you are not a fan of Ceasar dressing...as some people aren't. This is the best substitute.
Seriously Good Keto Lasagna ...and I do mean seriously.
cannoli cheesecake - Who doesn't like a good cannoli? ...well you don't need to fuss with filling a little crispy tube for all that cannoli flavour ... now it comes in cheesecake form.
Milano cookies... this recipe is a mint chocolate spin on that chocolate sandwich cookie, but you could easily leave the mint out or change it up to orange, or some other flavour.
