Keto Recipe Digest #5

Hi Everyone and Happy Canadian Thanksgiving Weekend!
This week we have a number of recipes on the “sad desk lunch” theme... that make lunch a little less sad.
There are the meat hand pies (think along the lines of little hand held beef pot pies and you’ve got the right idea of what these are)... These are perfect for the lunch box, because you can eat them warm, or cold, sitting at your desk listening to a conference call on mute or running down the hall to get to the next meeting ... all goods qualities for a lunch food item.
Then there’s the quick chopped salad which is very versatile because you can really just toss anything in... and the sub sandwich salad, (think of a nice Italian assorted sub without the bun and that’s this salad), and if you don’t eat ham, you can easily substitute chicken or turkey, or even leave it out altogether. I’ll often set up a few larger travel containers on a Sunday so salads are ready to grab and go during the week - and not having to think about what I’m going to eat for lunch makes me happy.
The other three recipes in this week’s digest qualify for inclusion for the sad desk lunch theme but they fit elsewhere too:
Keto granola - add some low carb yogurt, a drizzle of sugar free honey substitute, (and if your macros for the day allow it a couple of berries), and this is a brilliant breakfast or lunch parfait. Toss a scoop or two into a bowl of low carb dairy or a soy or but based milk alternative and you have breakfast sorted.
Keto apple cheese Danish- this is one of the recipes I brought to the Rosh Hashana table a few weeks back, so it's definitely works as a family dinner dessert, but a slice of this with some coffee in the morning, or afternoon, would works just as well as a ”sad desk breakfast or afternoon snack”, see what I’m sayin’?
Keto mars bar (or snickers) - yeah, this recipe probably fits better into the ”foods I ate as a kid” theme but I can't be the only one out there who’s ever resorted to the candy options out of the vending machine for a 2 pm pick me up... So on that basis, this one qualifies for the sad desk lunch themed digest too. I love, love, love this Keto rendition of these candy bars because of how well it mimics these candies and how easy it is to put it together. I make a batch, cut them into 3/4”- 1” sized pieces, store them in the fridge and pull out a piece or two when I’m craving something sweet. They fully hit the spot for that.
